Ripe and fermented fruits, especially quince and shadberry, followed by apple compote

Taste

Vigorous, with ripe fruits repeating on the palate, slightly astringent because of the tannines. Requires more concentration and,as time goes by, opens up to new experiences

Riotto or pasta with seafood ot mushrooms
